The greatest advantage of a peelboard proofer is that it allows for the production of a wide range of products without any significant limitation to product dimensions.
It is suitable for almost all types of dough, with the exception of dough with a high water content that requires proofing in molds. The main difference in comparison to tray proofers is the manner in which the products are transported to the oven, because the products are not inverted during unloading from this proofer.
